Lemons, lemons, lemons!!

We have SO many ripe meyer lemons on the tree in our yard right now, it’s insane. Do you have any favorite recipes using lemons?

    I just used a dozen Meyer lemons to make some infused vodka for gifts this year. Peel or zest the lemons (try not to include any white pith), cut the body of the fruit into chunks, and let all of it steep in vodka for a couple of weeks. Strain through cheesecloth and mix into your favorite cocktails.

    You can add simple syrup to taste if you like; I also added fresh tarragon to add a little depth to the flavor – delish!

    so to share a funny story, my mom would slab some lemon juice on my hair when we were outta gel (hey early 80s anything goes) before going to school. talk about some citrusy and slick grade school memories LOL

    I’m so envious. I love Meyer lemons. Make a lemon jelly roll, or lemon curd. Lemon curd with Meyer lemons is THE BEST. Happy New Year!

    I love the idea of making lemon salt to preserve the meyer flavor (if you tree ever slows down). You just grate the peel and mix with coarse sea salt. I can’t find the recipe, but I did find this one for preserved meyers… sounds so exotic and delicious to cook with… http://www.gourmet.com/recipes/1990s/1999/12/preservedmeyerlemons
    Ooh, and my boss makes delicious lemoncello with his meyers. I have tons of normal lemons too… maybe we need to don our aprons and get together for an old-fashioned preserving party?

    Seriously? Lemons? Meyer lemons? On YOUR tree in YOUR YARD? But you’re talking to me about the snow and being jealous? Woman! Y’all are crazy!

    Hey UB- I know, how can I complain?? I think I’ll have my friend Dani over to make an assortment of goodies. Definitely doing the meyer lemon infused salt and candied lemon peels…yummm!! ;) And Happy New Year to YOU!!! xx
